My vocal chords will likely be sore for weeks after tonight's very very long Pascha service(s). For those of you out of the loop, I have been appointed to be the chanter at our church. My wife and I have pretty much been the entire choir for the last few months, and Beth has sung at a total of 18 services during Holy Week. Our feet and our voices are tired, but we are still joyous.
After the service, it is our tradition to break the fast with a rather extravagant meat- and cheese-laden meal. The center of the feast is the lamb, of course. Surrounding that is various cheeses, dolmades, rice, casseroles, etc. However, my Pig Candy ala Breda disappeared faster than anything else at the table. I nearly tried Robb's recipe, but then I realized it was just a poorly plagiarized imitation of the real deal. The meal was topped off when our new priest handed me a Miller Light (ease off, beer snobs.) American beer strangely goes really freaking well with candied bacon!
